Protein Smoothie Bowl

Smoothies are pretty versatile - it can serve as a breakfast, snack, dessert, anything you want really.

I occasionally enjoy eating my smoothie with a spoon out of a bowl so tweaked my ingredients to make it so. I usually like to eat this as my afternoon snack but I swear it could be a great swap for ice cream too!

Feel free to play around with measurements, it’s the only way to get the consistency YOU like. I came up with this recipe after a few tries because I liked the combo of flavors. Your taste buds may crave something different, so go with what you like! Again, the key is balance and being able to incorporate lots of nutrients in one bowl.

Bonus: this is blood sugar balance-approved, at least according to my testing!


Ingredients

  • 1 c. almond milk (or milk of choice)

  • 1 scoop vanilla protein powder*

  • 1/2 c. frozen chopped spinach

  • 1/4 c. wild blueberries

  • 1/2 frozen sliced banana

  • 1 T. peanut butter*

  • 1 T. chia seeds

  • 4-5 cubes of ice depending on your frothiness preference


I just throw this all in my Vitamix and blend to my desired consistency (just be careful on those big pieces of ice!).

You don’t need anything else but I like to top mine smoothie bowl with some grain-free granola and toasted coconut flakes.

*Protein powders I’ve tested and liked - clean ingredients and good taste: Truvani, Be Well by Kelly, Organifi, Equip (no affiliates here)!

*Peanut butter: homemade is best but MaraNatha and CB’s Nuts makes some good organic, one to two-ingredient options (just peanuts and salt)
