Mango Lassi Chia Pudding
Warmer months mean my body craves more tropical fruits. My favorite all-time fruit is mango—and specifically Philippine mangoes—but it’s not a fruit or variety that’s easily available year-round. The closest I can come to buying it in the store is the Mexican variety and I love seeing them front and center in the produce section when they come into season.
When all else fails, frozen fruits and veggies are such an easy way to get your servings in, but also catches them at their peak ripeness before freezing. This means it’s easily accessible whenever you need it and you can stock up without worrying about spoilage.
Seeing as mangoes are in season right now, I got inspired to create a mango lassi-flavored chia pudding to have on hand for a pre-workout or afternoon snack or dessert (added vanilla protein for the extra protein kick!).
This came out so creamy and is definitely a recipe I’m adding to my rotation this summer. Enjoy!
A quick shoutout about chia seeds if they aren’t already part of your healthy food arsenal. These little seeds are packed with fiber, omega-3 fatty acids, protein and antioxidants. They have a ton of health benefits and act like a nutritional heavyweight.
Ingredients
Makes 3-4 servings
1/2 c. Greek yogurt
1 c. coconut milk
3/4 c. almond milk
1/2 scoop vanilla protein
1 c. mango (2 c. frozen chunks)*
1/2 T. maple syrup
1/8 t. cardamom (more if you like it)
1 t. vanilla
pinch of salt
6 T. chia seeds
Directions
Blend all ingredients in a blender until well-incorporated and pour into three sealable containers
Add 2 tablespoons of chia seeds to each container and mix well
Seal and refrigerate overnight
Enjoy as is or top with toasted coconuts or whatever your heart desires!
*If using frozen mangoes, I suggest warming it up in a saucepan to soften before blending. This brings out the flavor more.
