Greek yogurt 1 c. coconut milk 3/4 c. almond milk 1/2 scoop vanilla protein 1 c. mango (2 c. frozen chunks)* 1/2-1 T. maple syrup 1/8 t. cardamom (more if you like it) 1 t. vanilla pinch of salt 6 T. chia seeds Directions Blend all ingredients except for chia seeds in a blender until well-incorporated and pour into four small sealable containers Add 2 tablespoons of chia seeds to each container and mix well Seal and refrigerate overnight Enjoy as is or top with toasted coconuts or whatever your heart desires! *If using frozen mangoes, I suggest warming it up in a saucepan to soften before blending.       <image:caption>INSTRUCTIONS Preheat oven to 350°F. Dry Ingredients: In a large bowl, combine almond flour, coconut flour, sweetener, baking powder, baking soda, and salt. Whisk to mix thoroughly. Wet Ingredients: In a separate bowl, whisk together the egg, yogurt, melted butter, and vanilla extract until smooth. Form the Dough: Add the wet ingredients to the dry ingredients and mix until a dough forms. If the dough seems too dry, add 1 tablespoon of almond milk at a time until it holds together but isn’t sticky. Fold in Blueberries: Gently fold in the blueberries, being careful not to crush them. Shape the Scones: Transfer the dough to a lightly floured surface (using coconut or almond flour). Shape it into whatever you’d like! Bake: Arrange the scones on the prepared baking sheet, spacing them slightly apart. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. Heat olive oil, then add diced onion and garlic to cook for 5 minutes. Add Ingredients: Add the butternut squash, black lentils, quinoa, tomatoes/salsa, broth, coconut milk and spices. Stir well. Pressure Cook: Secure the lid and set the Instant Pot to Manual (High Pressure) for 10 minutes. Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure. Taste and Adjust: Stir the stew well. Taste and adjust seasoning (add more salt, lime juice, or spices as needed). If too thick, stir in a splash of broth or water.       <image:caption>Welcome! I’m a National Board Certified Health &amp; Wellness Coach and Functional Medicine Certified Health &amp; Nutrition Coach who loves to cook and eat well, live fully, move frequently, and spend time with the people I care about. We all have a story of how we got to where we are today. Let me share mine with you... I was living what I thought was a pretty good life: I had a husband and family who loved and supported me, a solid group of friends I could depend on, a successful career in NYC. But then something tragically unexpected happened. I woke up one Saturday morning--the day after my 43rd birthday and the day before my 11th wedding anniversary--to the sounds of my husband taking his last breaths. The thing that no one ever imagines will happen to them, happened to me. This felt like a gut punch and shook my world to its core, but it also inescapably awakened something in me. This trauma forced me to dig deeper than I ever had and allowed me to learn things about myself I may have never learned.  Nearly two years later, I left my career of nearly 20 years and had planned to take an 'eat-pray-love' trip that summer...then the pandemic hit. For me, this was fortunately a blessing in disguise because it allowed me to take the time to explore what I was really passionate about. I was led down a rewarding path and discovered mental and physical balance in life, cultivated an appreciation for mindfulness, thoughtful fitness and movement, and an approach to nutrition that changed the way I looked at everything. I could not satisfy the desire to keep learning and optimizing my health and well-being. That brings me here today where I've built a career around my experience, passions and purpose, in hopes of helping others feel their best too.  Whatever you've experienced in your life, everyone wants to feel their best and find joy. I want to use the next chapter in my story to help you find the most optimal version of yourself. Don’t wait for the big wake-up call before you find it. It will be a challenging journey but I am here to walk alongside you each step of the way and remember, the start of each journey begins with one small step.
